Jean-Francois Bordet is responsible for the domain Seguinot-Bordet since 1998. The Seguinot family lives in Maligny in the Chablis region since the late 16th century. Their vineyards lie in a perfect position on the right bank of the Serein river facing in south east direction.
In 2002 Jean-Francois Bordet starts to buy grapes from vintners in the Chablis region to enlarge the portfolio of the domain Seguinot-Bordet. The Vaillon 1er cru and the Vaudesir Grand Cru are famous products out of this activity. The vines on their domain age 15 to 100 years. A very particular limestone (Kimmerridgian) on which they grow gives their wine a specific iodine character and typicity. Terroir and selection of the grapes are therefore responsible for the character of the wines.
The Bordet family produces their wine in a state-of-the-art cellar with horizontal temperature controlled stainless steel tanks with ageing sur lie. During this period the lies are stirred up to prevent their decomposition and to give the wine a fruity aroma (Batonnage). The grand Crus at the domain Seguinot-Bordet are elevated in small oak foudres to underline the tannic notes.
The wines are classic Chablis. The terroirs and the elevation method give them a clear minerality and clean fruit with a bright acidity. The main wines produced at the domain Seguinot-Bordet are:
